I already posted a roundup of some of my favorite quick veggie meals 1 1/2 years ago and you guys absolutely loved it. It got more than 63.000 shares, so I decided to make another weeknight meal post with newer recipes. I tested all of these recipes several times and some are even among our weekly staple meals.
I absolutely loved the festive food we had over the holidays, but now I’m really craving easy meals with pasta, quinoa, or rice. And with the weather being super cold, also vegan soups and stews. Nothing fancy, just easy meals that are ready in 30 minutes or less. Sometimes I even double the recipe and make a bigger batch so we’ve got leftovers on the next day for lunch. I know some people don’t like leftovers, but I absolutely love them!
