Ingredients & Substitutions
- Tomatoes – large tomatoes. Make sure they are ripe and perfectly red. You could also use cherry tomatoes instead.
- Olive Oil – I recommend organic, extra virgin olive oil for the best flavor.
- Balsamic Vinegar
- Parsley – use freshly chopped parsley. The recipe will also work with frozen parsley, but it tastes much better with fresh parsley. You could also use fresh basil instead of parsley.
- Red Onion – it’s crunchy texture and mild flavor makes it perfect for salads.
- Lemon Juice – use fresh lemon juice
- Sugar – just a pinch for the perfect flavor.
- Salt & Pepper
How To Make This Recipe
1. Step: Wash and dice the tomatoes. Finely chop the parsley and the red onion. Juice the lemon.
2. Step: In a small bowl, combine all ingredients for the dressing.
3. Step: Place all ingredients for the salad in a large bowl, add the dressing, and stir well.
Recipe Notes
- You could also replace the large tomatoes with cherry tomatoes for a change. Cherry tomatoes are usually even more flavorful because of their smaller size.
- The salad is also great with fresh basil instead of parsley.
Storage
Stored in an airtight container in the fridge, it will last up to 3 days.
Variations
To change things up a bit, you could also add diced cucumber, chickpeas, or vegan feta.
