    Why This Recipe Works 

    Let’s celebrate summer with this delicious and simple tomato onion salad! With just a handful of simple ingredients and a few minutes of chopping and tossing, you’ll have a colorful and flavorful salad that goes with basically anything. It’s a light and refreshing option for hot summer days or a vibrant addition to your dinner table. 

    It’s a great recipe for busy days when you want something quick, yet satisfying. It goes well with crispy bread topped with roasted red pepper hummus or tomato butter. Or make it a light summer meal with my foccacia bread with olives. 

    This salad is a staple in our kitchen over the warmer months and I also love to make it for BBQs, potlucks, and picnics. 

    In summer, tomatoes are bursting with sweetness and acidity, which creates a refreshing and vibrant base for this salad.

    The parsley adds a fresh and herbaceous note and provides a pleasant contrast to the sweetness of the tomatoes. Parsley is super healthy and it’s rich in iron and vitamin C. 

    The red onions, with their mild bite, bring a touch of pungency and crunch. 

    So let’s get ready to savor the taste of summer and enjoy the simplicity and deliciousness of this vibrant tomato salad!

    Ingredients & Substitutions

    • Tomatoes – large tomatoes. Make sure they are ripe and perfectly red. You could also use cherry tomatoes instead. 
    • Olive Oil – I recommend organic, extra virgin olive oil for the best flavor. 
    • Balsamic Vinegar 
    • Parsley – use freshly chopped parsley. The recipe will also work with frozen parsley, but it tastes much better with fresh parsley. You could also use fresh basil instead of parsley. 
    • Red Onion – it’s crunchy texture and mild flavor makes it perfect for salads. 
    • Lemon Juice – use fresh lemon juice
    • Sugar – just a pinch for the perfect flavor. 
    • Salt & Pepper 

    How To Make This Recipe

    1. Step: Wash and dice the tomatoes. Finely chop the parsley and the red onion. Juice the lemon.

    2. Step: In a small bowl, combine all ingredients for the dressing. 

    3. Step: Place all ingredients for the salad in a large bowl, add the dressing, and stir well. 

    Recipe Notes

    • You could also replace the large tomatoes with cherry tomatoes for a change. Cherry tomatoes are usually even more flavorful because of their smaller size. 
    • The salad is also great with fresh basil instead of parsley. 

    Storage

    Stored in an airtight container in the fridge, it will last up to 3 days. 

    Variations

    To change things up a bit, you could also add diced cucumber, chickpeas, or vegan feta. 

    Besides, you could use different tomato varieties such as yellow, orange, and red cherry tomatoes to make this tomato salad look even more colorful.

    This tomato onion salad with fresh parsley is the perfect summer salad. It's fresh, light, and super easy to make! I love to make it for BBQs and potlucks.

    Ingredients

    • 6 large tomatoes
    • 1 red onion
    • 1 teaspoon salt
    • 2 tablespoons balsamic vinegar
    • 4 tablespoons olive oil
    • black pepper, to taste
    • 1 pinch sugar
    • 1 teaspoon lemon juice
    • 1 large handful fresh parsley
