I absolutely love to serve this tomato butter on crispy roasted bread or bagels. The recipe is incredibly easy, but it’s packed with flavor and it’s insanely delicious.
It also makes a great addition to BBQs in the summer. And I even love to use it for quick pasta dishes. Just cook your favorite pasta and then add some roasted veggies or olives and toss everything with the tomato butter. Super easy and yummy!
Besides, it’s amazing with my focaccia bread with tomatoes and olives. Especially when it’s freshly baked and still warm!
The recipe is super budget-friendly and you need only four ingredients: vegan butter, garlic, sun-dried tomatoes in oil, and tomato paste. Finely chop the garlic and the sun-dried tomatoes and then place everything in a small bowl and stir well. Then just season it with salt and pepper and you’re good to go.
I’ve been making this recipe for a long time and it’s always a winner. Very quick and easy – 5 minutes is all you need!
What Goes Into This Recipe
- Butter – I used vegan butter. It should be pretty soft so it’s easy to stir. So just leave it out on the countertop for a while.
- Garlic – fresh garlic. I used one clove of garlic. Use more if you want a stronger garlic flavor.
- Tomato Paste
- Sun-Dried Tomatoes – in oil.
- Salt – sea salt.
- Black Pepper
How To Make This Recipe
1. Step: Finely chop the sun-dried tomatoes and the garlic. Alternatively you could also use a garlic press.
2. Step: Place all ingredients in a small bowl and stir until well combined. Season with salt and pepper.
Recipe Notes
- For even more flavor, you could add dried rosemary or thyme. Or stir in freshly chopped basil just before serving it.
- Make sure to use soft butter for this recipe, so it’s easy to stir.
- My favorite vegan butter is Earth Balance. Miyoko’s also works well.
