Okay, guys. Who could say no to chocolate peanut butter cookies that take only 5 minutes to make?! Definitely not me!! So I made these no bake cookies without milk the other day and we literally inhaled them…
No, I’m just kidding but as always they were gone waaaaaaay too fast. But you can’t blame us. Flo is having his final law exams in the next two weeks (poor guy!) and I’m just about to finish my master’s thesis, so chocolate AND peanut butter is always a great idea. I mean you just need a little treat once in a while (or every other hour) to stay tuned and focused, right? Haha!
These vegan chocolate no bake cookies are not only super yummy, but they’re also healthy-ish. I mean I wouldn’t go as far as to claim that chocolate is super healthy (although there are some pretty convincing health benefits!), but these are way better than the cookies you can buy at the store.
The best thing is that you need only four ingredients to make them. Plus, they’re vegan, gluten-free, oil-free and contain no added sugar. So, they’re just perfect when you feel like having a little chocolatey treat (totally me!) and don’t have enough time to turn on the oven (unfortunately me too, at least at the moment).
Besides, it’s been super hot in the last couple of weeks, so I really didn’t want to use the oven too often because it tends to turn our apartment into some kind of sauna… Not something you want to happen when you need to spend most of your time inside studying. So just give the oven a break and make these chocolate no bake cookies without milk and lots of peanut butter…
All you need for these are rolled oats, dark chocolate (make sure it’s labeled as vegan if you follow a plant-based diet), some peanut butter, and one or two tablespoons of almond milk. Of course you could also use any other plant-based milk like soy or rice milk for these vegan no bake cookies. You could even entirely leave out the milk and just use oats, chocolate, and peanut butter. The cookies will just turn out a bit harder this way.
First you need to melt the chocolate (either use a microwave or melt it on the stovetop). Once it’s melted stir in the oats and the peanut butter and add a splash of the plant-based milk if using. Put some parchment paper on a plate and evenly divide the no bake cookie batter. Form about six cookies and place them in the fridge for at least 2-3 hours, so they got enough time to harden up.
That’s it! After a couple of hours, you can enjoy these delicious chocolate peanut butter no bake cookies without milk. The perfect sweet treat for hot summer days!
