    Jambalaya Pasta

    If you love the aromatic flavors of traditional jambalaya then this cajun jambalaya pasta recipe is for you! It’s the perfect comfort food and it comes together super quickly.

    This easy vegan jambalaya pasta has become one of my favorite dinner recipes lately! It’s ready in less than 20 minutes and it’s so incredibly delicious. Maybe I like it even better than my vegan jambalaya with rice.

    What is Jambalaya?

    Jambalaya is a popular rice dish from the Southeast of the U.S., especially Louisiana. It commonly includes rice, vegetables, some kind of meat or sausage, and sometimes also seafood.

    Jambalaya has been around for a long time, namely since 1872. It can easily be adopted depending on what the cook has on hand.

    What is Jambalaya made of?

    Jambalaya usually consists of seasoned rice, vegetables, and meat. The traditional recipes call for some kind of sausage, mostly Andouille. It’s often paired with other kinds of meat or even seafood such as shrimp or crawfish.

    What Is Jambalaya Pasta?

    Jambalaya pasta is infused with the same spices as traditional jambalaya with rice. It also calls for traditional jambalaya vegetables like bell peppers and also for Andouille sausage. However, instead of rice it’s served over pasta, typically linguine or fettuccine. The outcome is a delicious and comforting pasta dish that is packed with flavor.

    What You Need For This Jambalaya Pasta:

    • fettuccine
    • red bell pepper
    • green bell pepper
    • red onion
    • vegan Andouille sausages
    • cajun seasoning
    • canned diced tomatoes
    • smoked paprika powder
    • cooked or canned kidney beans
    • one can diced tomatoes
    • garlic
    • salt and pepper
    • fresh parsley

    Except for the vegan sausage, you will find all of these ingredients in any regular supermarket. If you have problems finding the vegan Andouille sausage, you could also use vegan Chipotle sausages instead or even smoked tofu.

    Or you could even make your own vegan Andouille-style sausages at home with vital wheat gluten and chickpea flour.

    How to Make Jambalaya Pasta

    The recipe for this jambalaya pasta couldn’t be much easier. All in all, this recipe is ready in under 20 minutes. So it’s the perfect weeknight meal!

    1. Step: First, cook the fettuccine according to the instructions on the package. Set aside.

    2. Step: Finely chop the onion and the garlic. Dice the red and green bell pepper as well as the vegan Andouille sausage. Rinse and drain the canned kidney beans.

    3. Step: Then, heat some olive oil in a large pan. Sauté the onion for about two minutes until it’s translucent. Then, add the garlic and cook for another minute. After that add the bell pepper and the vegan sausage and cook on high heat for another 5 minutes.

    4. Step: Add the diced tomatoes and the spices and cook for 5 more minutes. Serve over fettuccine and sprinkle with chopped parsley.

    Ingredients

    • 9 oz fettuccine
    • 1 red bell pepper, diced

    • 2 cloves of garlic, minced
    • 2 vegan Andouille or chipotle sausages
    • 1 28 oz can diced tomatoes
    • 1 teaspoon Cajun seasoning
    • 1/2 teaspoon smoked paprika powder
    • 1 cup cooked kidney beans
    • salt, to taste
    • black pepper, to taste
    • 1/4 cup fresh parsley, chopped

    Instructions

    • cook the fettuccine according to the instructions on the package. Set aside.
    • Finely chop the onion and the garlic. Dice the red and green bell pepper as well as the vegan chipotle or andouille sausage. Rinse and drain the canned kidney beans.
    • Then, heat some olive oil in a large pan. Sauté the onion for about two minutes until it's translucent. Then, add the garlic and cook for another minute. After that add the bell pepper and the vegan sausage and cook on high heat for another 5 minutes.
