Guys, I got a new favorite breakfast: Carrot cake overnight oats with chia seeds, walnuts, and coconut flakes. I make overnight oats at least two or three times a week and I really love this new version! As all of the recipes I post on Vegan Heaven, it’s of course completely vegan. Plus it’s gluten-free, incredibly easy to make and super healthy! If you haven’t tried overnight oats yet, you should really give them a try!
It just feels so great to wake up and have a delicious and healthy breakfast waiting for you in the fridge…
Overnight oats are just oats that are soaked overnight in milk. I usually use rolled oats, chia seeds, almond milk, a mashed banana, and cinnamon and top it off with some berries in the morning. So good and easy! And it literally just takes 1 minute to make the night before.
I’m actually not a big morning person. Unfortunately I’m not one of those people who get up in the morning feeling super relaxed, happy, and full of energy. No, I guess I rather belong to the grumpy morning people. Haha! I’m always half asleep when I make breakfast. I still vividly remember the one time I dropped a part of my blender’s lid into the mixing bowl and only realized it when I heard this horrible sound. Well, I guess I don’t have to tell you this story didn’t end too well. At least not for the lid…
So overnight oats are just the perfect breakfast for me! Incredibly easy, packed with protein and fiber, and super versatile! I guess it’s safe to say they’re the easiest breakfast ever! I also love adding some cocoa powder once in a while or even peanut or almond butter. It actually kind of tastes like breakfast pudding this way.
I usually add one or two tablespoons of chia seeds because they keep hunger at bay all morning long. Plus, they contain an incredible amount of nutrients without having many calories. The recipe for these carrot cake overnight oats is super easy. Just combine rolled oats, chia seeds, and grated carrots in a bowl, add some almond milk, vanilla and cinnamon and let it sit in the fridge over night. If you want you can also sweeten it with some agave or maple syrup. In the morning, top it off with chopped walnuts, coconut flakes, and if you want with some more grated carrots. You can either eat it cold or warm it up a little bit. I like mine warmed. You can find the full recipe with the excact amounts in the recipe card beneath the post.

Carrot Cake Overnight Oats
Ingredients
- 3/4 cup grated carrot (about one small to medium carrot)
- 1 1/2 cups rolled oats
- 2 tablespoons chia seeds
- 2 1/2 cups almond milk
- 1 teaspoon natural vanilla extract
- 1-2 teaspoons ground cinnamon
- 1-2 teaspoons agave or maple syrup depending on how sweet you want them
- 1/4 cup walnuts, chopped
- 2 tablespoons coconut flakes
Instructions
- In a bowl, combine all ingredients except for the walnuts and the coconut flakes. Cover and refrigerate overnight until the almond milk is completely absorbed.
- Top with chopped walnuts and coconut flakes.
I LOVE this recipe! I think people have a misconception about chia seeds being low-calorie, however. Because they’re so small, it’s easy to get carried away. One serving of dry chia seeds is 3 tablespoons. Each serving contains over 190 calories. Based on a 2,000-calorie daily diet, you eat 9 percent of your day’s calories in just these 3 tablespoons of chia seeds. I followed your recipe because it sounded just delightful, but cut down to less than 2 teaspoons of the chia seeds & still got the thickening, texture, and some of their nutritional benefit.
The calories you will burn just on digesting the huge amount of fibre in chai seeds, so you shouldn’t be worried.

As to question above, two of my children are medically gluten free, and we don’t have a problem with vitamins and minerals as the only things truly missing are wheat, and a lot of processed foods. When you cook Whole Foods, you can cook gluten free and not miss anything. As for the above recipe being gluten free, it is only gluten free if you use certified gluten free oats to make it. Do not ever serve regular rolled oats to someone with celiac disease without telling them. Most oats are contaminated from the field, at the grain elevator, or the mill in processing.
How do you replace all of the vitamins and minerals you lose since you are restricted to gluten free foods? I assume you are in the 1% that have celiac disease. Do you supplement or try to replace with other foods? Or perhaps both?

I prepared it yesterday to have it for breakfast today…and it was as good as I expected! I also added an apple cut into small pieces and some raisins :)

I too eat overnight oats a lot. They are so convenient. I have never had carrot cake flavour though. They sound awesome and so healthy with all those carrots! Yum!
Haha, I’m not a morning person either, at least the getting up part, but once I’m up and going, I love being up early and enjoying a long day ahead of me. I love carrot cake and what a fabulous idea to turn it into overnight oats, looks SO GOOD!

Easy, healthy, morning-approved cake–um YES PLEASE!!! I’m not much of a morning person either usually, but the thought of this deliciousness waiting for me in the fridge will get me out of bed for sure. Or actually sometimes I make overnight oats in the morning and then eat them for dinner lol. Either way, I love all things carrot cake so this sounds totally amazing <3

I am a morning person ONLY if I have the whole place to myself and I can just sit with my cup of coffee and listen to the birds chirp while the sun rises. THEN, I can actually get stuff done. Getting out of bed and immediately hearing, “MOMMY, I. WANT. BREAKFAST!” is NOT how I like to start my day. But, since this is my life – thus, I am NOT a morning person. When I have time, breakfast is my favorite meal of the day. And these carrot cake overnight oats would be perfect for those days when I don’t have time. :)
