    2 Ingredient Blueberry Ice Cream

    Dear summer, Where are you?!  Please come back!! It has been raining almost non-stop for days now and we even had some serious floodings in some parts of Germany. I SO can’t wait for it to stop, so I can finally spend some time outside and go jogging again. But in the meantime I needed to have at least a little bit of summer, so I made some 2 ingredient blueberry ice cream with coconut chips, fresh berries, and granola on top.

    2 Ingredient Blueberry Ice Cream

    The best thing is that you need only two ingredients to make this vegan blueberry ice cream: Frozen bananas and blueberries. No need to add any kind of sugar, dairy, or anything else!!

    The riper the bananas are the better, because they will make the berry ice cream even sweeter. Just cut the bananas into slices and freeze them for a couple of hours,  or preferably overnight. Then put them in a blender together with the frozen blueberries and process until smooth. Use the pulse function and scrape down the sides if needed. I used frozen wild blueberries from Canada, which are my absolute favorite, but of course you could also freeze fresh blueberries for a couple of hours.

    I absolutely LOVE that this vegan blueberry ice cream is so healthy that you can even have it for breakfast. I mean ice cream for breakfast, how cool is that?!

    Blueberry ice cream is definitely my favorite kind, but it’s also great with frozen raspberries or strawberries.

    2 Ingredient Blueberry Ice Cream

    I’m pretty busy with writing my master’s thesis right now, so I really appreciate a quick and healthy treat like this 2 ingredient blueberry ice cream for a little break. Flo is studying for his final exam (law) in August, so our lives are actually a bit boring and one-sided right now. But at the same time it’s also super nice to be able to work from home a lot and have lunch together and stuff like that. And we just booked a trip to Bali last weekend!!! We got a really good deal and I’m sure we’re gonna have an awesome time after all this studying! The flights are pretty awful (32 and 35 hours and two stops in Paris and China…), but I can’t wait to spend two sunny weeks there! We’ve been to Thailand last year and we really loved it. We rented a scooter and it was so easy to get around and visit temples, explore waterfalls, and spend some time at remote beaches. Oh, and let’s not forget about snorkeling and all the delicious food we had! Oh, I seriously can’t wait for our next trip to South East Asia!! <3

    Oh and aren’t these little ice cream bowls cute? I actually got tons of cups, plates, and bowls and I even had to make some space in our living room because our kitchen cupboards are crammed full of all my cooking utensils. But I just couldn’t say no when I saw them. And I guess I’m not the only food blogger who’s addicted to pretty dishes and other cooking-related stuff, right?!

    This 2 ingredient blueberry ice cream might not seem like much at first sight, but it’s one of my absolute favorite recipes for summer!!

    Ingredients

    • 2 ripe bananas, sliced and frozen overnight
    • 1 1/2 cups frozen blueberries

    Instructions

      Good luck with your thesis. I remember doing mine and really being ready for it to be over. But the trip to Bali sounds amazing!
      You are totally getting me hooked on the idea of ice cream for breakfast. I’d have this in the morning for sure. And I like the idea of topping it with granola.

      Sorry about the horrible weather, I hope it clears up soon. This is the easiest vegan ice cream recipe I’ve ever seen. I have to try it this weekend. LOVE those little cups, their so cheery.

      I love nice-cream! I’ve never made it with blueberries though. I would totally have bought those bowls too to add to my ever expanding collection. They are so pretty!

      Those cups!! I adore them. I need them. What are they made of? So super cute, and no you are definitely not the only one with cabinets overflowing with mismatched dishes :D Banana ice cream is the best, blueberry is one of my favorite flavors. I always make it with a much higher banana to blueberry ratio, but I want to try your dark purple very-berry version now :)
