Super Easy Banana Sushi

This vegan banana sushi with dark chocolate and pistachios makes such an easy and delicious snack! If you like bananas, you will LOVE this banana sushi!

I just love sushi although I suck pretty much at rolling it. I don’t know how people get them to look all neat and accurate. Probably I should really take a sushi rolling course or something like that. Haha! So after our last sushi rolling disaster (they tasted amazing but didn’t look very nice), Flo came up with the idea of making sweet sushi. I first thought of exotic fruits in rice paper rolls, but then we ended up with these easy banana sushi rolls that are covered in chocolate and topped with pistachios, coconut flakes, chia and sesame seeds. No rolling required! ;-)

How To Make Banana Sushi:

The banana sushi rolls are really easy to make and are sooo delicious! All you need is three bananas (or of course more if you like), peanut butter, dark chocolate, pistachios, coconut flakes, and chia and sesame seeds. First coat the bananas with peanut butter, then cover them with melted chocolate and sprinkle them with the above named toppings. Let the chocolate harden for a couple of minutes, this will take about 5-10 minutes depending on how warm it is in your kitchen.

On hot summer days, put them in the freezer for a few minutes. To avoid chocolatey fingers, I sticked toothpicks in both ends of the bananas, so it’s easier to hold them while you cover them with chocolate.  Then cut them into bite-sized sushi pieces with a sharp knife and you’re done. I told you it was super easy, didn’t I?

Chopped nuts like almonds or peanuts are also great toppings. You can either eat the banana sushi right away or freeze it for an hour and two and enjoy it as easy vegan ice cream bites. I love having them wait for me in the freezer, so I can just get one once in a while (or every other hour) as a little treat. :-)

Ingredients

  • 3 bananas
  • 2 tablespoons peanut butter I used unsweetened peanut butter
  • 1 3.5-ounce package vegan dark chocolate
  • 3 tablespoons chopped pistachios
  • 2 tablespoons sesame seeds
  • 1 tablespoon chia seeds

Instructions

  • Melt the chocolate (either by using a microwave or place it into a heatproof bowl and put it over a pan of barely simmering water).

      Hi Joe,

      I used baking chocolate, which I think works best, but you can also use other chocolate. Just make sure to melt it long enough, so it don’t gets lumpy. :-)

    Does anyone else have the same problem as me? When I dip the banana in the melted chocolate it comes out lumpy, not

      Hi Cindy, I’m sorry to hear that they didn’t turn out as planned. Did you maybe not melt the chocolate long enough? Or maybe you could also try using a spoon to cover them with chocolate instead of dipping them into the melted chocolate. I really hope that helps! :-) I’ve never had this problem before. What kind of chocolate did you use?

    Yaass! Great idea for a simple dessert. I love the peanut butter in it too! Also, my trick for rolling sushi is to always use a soft, wet ingredient, like sweet potato, avocado, beets, etc., where you usually place the rice. So much more pliable when it’s wet nori! If you haven’t seen my sweet potato sushi, I have a rolling guide…
