This avocado pasta sauce is perfect when you’re looking for a quick and easy dinner recipe. It’s vegan, super delicious, and incredibly healthy. 10 minutes is all you need!
Nothing is more comforting than a big bowl of pasta! And it’s even better when it’s healthy at the same time like this pasta with avocado pesto. It’s one of my new favorites for busy weeknights.
Why This Recipe Works:
The recipe couldn’t be any easier. It’s perfect for lazy cooking nights after a long day at work.
While the pasta cooks on the stove, you make the sauce by adding all ingredients to a food processor and blending until you have a smooth and creamy sauce.
And the recipe is not only super easy but also incredibly healthy and packed with nutrients. The avocado adds lots of healthy fats while the fresh spinach provides iron. It’s also a great source of Vitamin A and C.
Nutritional yeast has cheesy and nutty flavor, which makes it perfect for vegan pestos.
The combination of fresh basil, garlic, and lemon juice adds lots of flavor. The roasted tomatoes and pine nuts make this recipe super extravagant while being incredibly easy at the same time!
What Goes Into This Recipe
- Avocado – I usually use Hass avocados.
- Lemon Juice – use freshly squeezed lemon juice. It really makes a difference.
- Nutritional Yeast – it has a cheesy and nutty flavor. You can find it in the health food aisle.
- Pasta – I used gemelli pasta, but the recipe also works well with rotini.
- Olive Oil – I recommend using organic extra virgin olive oil.
How To Make This Recipe
The preparation of this recipe couldn’t be much easier! 10 minutes is all it takes!
While the pasta is cooking on the stovetop, prepare the avocado sauce and you have a delicious and heathy meal in no time.
1. Step: Cook the pasta according to the instructions on the package.
2. Step: In the meantime, combine all the ingredients for the avocado sauce in a food processor or blender and process until smooth. Set aside.
3. Step: Roast the pine nuts in a pan without oil. Be careful not to burn them as they burn rather quickly.
4. Step: Cut the cherry tomatoes in halves and either roast them in the oven for a few minutes, cook them in a pan, or serve them fresh with the pasta.
5. Step: Combine the cooked pasta with the avocado sauce and carefully stir in the cherry tomatoes. Sprinkle with the roasted pine nuts and fresh basil. Enjoy!
Recipe Notes:
- If you can’t find nutritional yeast, you could leave it out. However, it gives the sauce a very nice flavor. You can find nutritional yeast in the organic section of your grocery store or at your local health food store.
- I like this pasta dish best with oven-roasted cherry tomatoes with garlic. So yummy!
- You could of course use any pasta shapes you like, but I think this dish works best with curly pasta.
FAQs:
How Long Does This Recipe Keep?
Make sure to serve this pasta dish immediately after cooking. The avocado sauce will change its bright green color rather quickly and it won’t taste the same anymore.
It doesn’t keep well, so I don’t recommend keeping leftovers for later.
What Kind of Blender Should I Use?
I usually use my Cuisinart food processor. It’s perfect for making dips and sauces. But you could also use a Vitamix or any other kind of blender.
