This vegan bread is definitely the healthiest bread ever! It’s gluten-free, yeast-free, and made with only oats, seeds, and nuts. And it’s so easy to make! No bread maker or food processor needed. This bread seriously is life changing!
I like white bread, but I think bread with seeds and nuts is sooo much better! It took me a while and a few tries until I brought this recipe to perfection. We absolutely can’t get enough of it and I hope you’ll like it as much as we do!
Is Making Your Own Bread Difficult?
I’ve always thought making your own bread would be super complicated and time-consuming. But it really isn’t that much work if you make an easy bread recipe like this one.
I actually first tried this bread, which is also known as “wonder bread” or “life changing bread”, as a bread mix that I found at a local health food store. It was a mixture of oats, seeds, and nuts, and you just had to add water.
I was so surprised how good this bread turned out and how incredibly healthy it was. So I just had to come up with my own recipe.
The secret ingredient is psyllium husks that hold all of the ingredients together. They’re an excellent thickener and they’re very healthy. If you’ve never heard of them, check out this article that tells you a lot about the health benefits of psyllium.
All you need is a large bowl to combine all of the ingredients and a loaf pan. You don’t need a food processor, kneading machine, or a bread maker like you do for other homemade bread recipes.
Yay! I’m all for easy and fast recipes that are still super healthy at the same time. You should try this vegan bread with homemade vegan cream cheese or chia jam. It’s sooo good!
Why This Vegan Bread Is So Much Better Than Store-Bought Bread:
There are so many reasons why this vegan bread is much better for you than store-bought bread! You will LOVE it!
It’s:
- insanely healthy
- gluten-free
- yeast-free
- packed with nutrients and fiber
- rich in protein and omega-3 fatty acids
- a great source of iron, calcium, folate, and pottasium
- very easy to make (all you need is a big bowl and a spoon!)
- super quick to make (the preparation takes less than 10 minutes)
What You Need For This Vegan Bread:
You might be a bit surprised that the recipe calls for only oats, nuts, and seeds. But it really works and it holds together perfectly as you can see in the pictures.
You need:
- rolled oats
- sunflower seeds
- pumpkin seeds
- psyllium husk
- almonds
- hazelnuts
- kibbled flaxseeds
- chia seeds
- salt
- flaxseed oil
- warm water

How To Make Vegan Bread:
You won’t believe how easy the recipe is! All you need to do is combine all of the ingredients in a large bowl and let them sit in the fridge for a while. Then transfer the mixture to a loaf pan and bake it for 70 minutes.
That’s it! You’ve got the healthiest bread ever!
STEP 1: Combine all of the ingredients in a large bowl. Cover the bowl and let it rest in the fridge for at least four hours. You could also store it in the fridge overnight.
STEP 2: Generously grease a loaf pan with olive oil. Fill the mixture into the loaf form.
STEP 3: Bake the bread at 390 °F for 70 minutes without preheating the oven. Once the bread is done, carefully remove it from the loaf pan without letting it cool down.
Recipe Notes:
- Please don’t skip the psyllium husks in this recipe. It’s a thickener that is used to hold the bread together. It’s basically binding all of the ingredients together and the recipe won’t work without it. You might be able to find them in the organic section of your supermarket or you could order them online. There is no substitute for the psyllium husks. You also shouldn’t use whole psyllium husks for this bread.
- Oats are gluten-free by nature. However, most are produced in facilities that contain gluten. So if you want to make the vegan bread 100 % gluten-free, make sure to use rolled oats that are certified gluten-free.
- You can be quite flexible concerning the nuts as long as you use the total amount of nuts that is listed in my recipe. You could use hazelnuts, almonds, pecans, and macadamia nuts, either alone or mixed.
- If you want, you could also add in some sesame seeds or black olives. Or season the bread mixture with Italian spices. However, I usually make my bread “plain”, so I can eat it with sweet and savory spreads.
- The bread freezes really well. So if you can’t finish it all, just freeze it for later.
- You need kibbled flaxseeds for this vegan bread. I usually buy whole flaxseeds and then just process them in my Vitamix to kibbled flaxseeds or ground flaxseeds.

I’ve made this bread dozens of times. I don’t eat wheat so I was looking for an alternative. I’ve modified it to my tastes (walnuts, almonds and pumpkin seeds) and I process it in the food processor so that it is less chunky/nutty and it turns out great every time. My 1 year old granddaughter loves it and so does the rest of my family. Thanks so much for creating this!

This is a fabulous recipe! I doubled it for 2 loaves and placed parchment paper in loaf pan. I pressed the mixture firmly in both and the result was two perfectly delicious loaves!! This will be my go to from now on can’t wait to try it topped with pesto and roasted garlic. You are a genius!
