    Strawberry Chocolate Dessert Cups

    These strawberry chocolate dessert cups are such a delicious snack! They’re kind of like peanut butter cups. But instead of peanut butter they’re filled with strawberry coconut cream and fresh strawberries. So good and of course, as all of my recipes, 100 % vegan. Plus, they’re gluten-free, dairy-free, and free from refined sugars.

    I’ve always loved the combo of strawberries and chocolate. As a kid, I always had these chocolate bars that were filled with a cream made of strawberries and yogurt. OMG, they were so good! I just saw them in the supermarket the other day, so I thought I should really make a vegan version of them. However, eventually I didn’t make chocolate bars, but vegan chocolate cups. I didn’t have a silicon mold to make chocolate bars and I couldn’t find a good one online. I need to look into that a bit more, but I’ll definitely plan to make some of these vegan chocolate bars soon. But in the meantime, I’ll just enjoy these vegan strawberry chocolate dessert cups. They’re SO yummy! And don’t they look amazing?!

    Strawberry Chocolate Dessert Cups – What You’ll Need

    And they’re also pretty easy to make. You need only 5 ingredients:

    • dark chocolate
    • strawberries
    • coconut milk
    • cashews
    • maple syrup

    That’s it! They’re so rich and chocolatey. And incredibly easy to make!

    Strawberry Chocolate Dessert Cups

    Simply coat silicone cupcakes liners with melted chocolate and freeze for about 20 minutes. You could also use paper cupcake liners, but I prefer to use silicon ones. In the meantime, make the filling. Blend the cashews together with the strawberries, the maple syrup, and the coconut milk. Spoon the strawberry cashew mixture into the chilled chocolate cups, add a sliced strawberry on top, and cover with more melted chocolate.  Add another strawberry slice on top and put them back in the freezer.     You can enjoy them frozen or let them thaw for about 20 minutes before serving. Totally depends on what you like better. I usually prefer to eat them frozen though.

    Strawberry Chocolate Dessert Cups

    These vegan chocolate cups with strawberry filling are the perfect vegan dessert. And you need only five ingredients to make them: dark chocolate, strawberries, cashews, maple syrup, and coconut milk. It's such an easy vegan recipe! And they're super rich and chocolatey. Big YUM!

    Ingredients

    • 2 cups dark chocolate, chopped
    • 1 cup cashews soaked for 4-6 hours in water
    • 6 strawberries (for the filling)
    • 2 tablespoons full fat coconut milk (should be firm)
    • 1 tablespoon agave or maple syrup
    • 1/2 cup strawberries
    • 2 tablespoons coconut flakes

    Instructions

    • First, melt the chocolate. Either in the microwave or on the stovetop.
    • Then coat 12 silicone cupcakes liners with the melted chocolate. Use about 1 teaspoon per cup. Gently press the chocolate up the sides of the liners using a spoon. Put the cups in the freezer for about 20 minutes. You could also use paper cupcake liners, but I prefer to use silicon ones.
    • In the meantime, make the filling. Blend the cashews together with the strawberries, the maple syrup, and the coconut milk into a creamy mixture. Spoon the strawberry cashew mixture into the chilled chocolate cups, add a sliced strawberry on top, and cover with more melted chocolate.
    • Add another strawberry slice on top, sprinkle some coconut flakes on top, and put them back in the freezer.
    • You can enjoy them frozen or let them thaw for about 20 minutes before serving. Totally depends on what you like better. I usually prefer to eat them frozen though.

      Thanks for this delicious recipe, Sina! I made them yesterday with the help of my daughter (she’s the biggest chocolate fan in the world!) and they turned out so delicious! We ate them frozen, which was perfect because it was a very hot day yesterday. Will make them again soon and we’ll try using other berries as well. Raspberries is next on your list!
