This Greek baked orzo with kalamata olives and vegan feta is the perfect comfort food. This dish is packed with Mediterranean flavors and it’s also a real hit with kids! And the recipe is super easy – 30 minutes is all you need.
Why This Recipe Works
I absolutely love orzo pasta! It kind of looks like large rice grains and it’s also a huge hit with our twins. They call it “kids pasta” because it’s so small.
We’ve been making Greek baked orzo quite a few times over the last few weeks and it’s always super delicious and comforting! The recipe is incredibly easy, so it’s also great for busy weeknights. 30 minutes is all you need.
I love that the orzo is cooked in a combination of vegetable broth, canned tomatoes, sautéd onion and garlic, and Mediterannean spices. This way it absorbs the flavors really well.
Before baking it, I added pan-fried vegan beef crumbles, bell peppers, and olives. To top it off, sprinkle it with crumbled vegan feta. So yummy!
What Goes Into This Recipe
- Orzo – a type of pasta that looks like large grains of rice. It’s also known as Kritharaki in Greece and risoni in Italy. It has a short cooking time and it’s perfect for this recipe!
- Bell Pepper – I used a red and a yellow bell pepper.
- Onion – red onion.
- Garlic
- Canned Tomatoes – diced.
- Spices – dried oregano, basil, sweet paprika powder, salt, and black pepper.
- Vegetable Broth
- Tomato Paste
- Vegan Ground Beef Crumbles – use your favorite brand.
- Olives – I used Kalamata olives. They are very large and have a meaty and smooth texture.
- Vegan Feta – use your favorite brand.
- Parsley – freshly chopped.
How To Make This Recipe
1. Step: Finely chop the garlic and the red onion.
2. Step: Heat some oil in a large pot and sauté the onion for 2-3 minutes or until translucent. Then add the garlic and cook for another minute. Then add the spices and the tomato paste. Stir well and cook for another minute until fragrant.
3. Step: Then add the orzo, the vegetable broth, and the canned diced tomatoes.
4. Step: Bring to a boil. Then cook on low heat for about 6 minutes until the orzo has soaked up all of the liquid and is tender. Stir very often, so the pasta doesn’t stick to the bottom of your pot. If needed add a bit more vegetable broth.
5. Step: Dice the bell peppers. Preheat your oven to 425 °F.
6. Step: In a large pan, heat some olive oil and pan-fry the vegan ground beef crumbles until crispy. Or follow the instructions on the package. Add the bell peppers when you start frying the vegan ground beef.
7./8. Step: Once the orzo is tender, pour it into a casserole dish and add the cooked vegan beef crumbles and bell pepper. Also add the olives and stir well. Crumble the vegan feta with your hands and sprinkle it over the pasta.
9. Step: Place the casserole in the oven and turn on the grill function or broil setting. Let the vegan feta melt for a few minutes and let it get a few golden spots. But make sure to pay close attention, so it doesn’t get too dark.
Recipe Notes
- I used store-bought vegan feta for this recipe. If you can’t get ahold of it, you could also use homemade vegan feta made out of tofu. It won’t melt, but it will still be super delicious. You could either crumble it over the top or add cubes.
- If you’re not a fan of vegan meat alternatives, you could add canned lentils or kidney beans instead of the vegan ground beef crumbles. I actually like to add cooked brown lentils when feeding this to our kids for extra protein.

Stored in an airtight container in the fridge, it will last 4-5 days.
What’s The Best Way to Reheat It?
I think the easiest way to reheat it is in the microwave. If you’ve got a large amount of leftovers and they are still in the casserole dish, you could also place it in the oven. Reheat it at 350 °F for about 5 minutes.
Can I Freeze It?
Yes, you can freeze it. But it might be a bit soft or mushy after thawing.
