Tomato Onion Salad

This tomato onion salad with fresh parsley is the perfect summer salad. It's fresh, light, and super easy to make! I love to make it for BBQs and potlucks.

Ingredients

  • 6 large tomatoes
  • 1 red onion
  • 1 teaspoon salt
  • 2 tablespoons balsamic vinegar
  • 4 tablespoons olive oil
  • black pepper, to taste
  • 1 pinch sugar
  • 1 teaspoon lemon juice
  • 1 large handful fresh parsley

Instructions

  • Wash and dice the tomatoes. Finely chop the parsley and the red onion. Juice the lemon. 
  • In a small bowl, combine all ingredients for the dressing. 
  • Place all ingredients for the salad in a large bowl and add the dressing and stir well. 

Notes

  • You could also replace the large tomatoes with cherry tomatoes for a change. Cherry tomatoes are usually even more flavorful because of their smaller size. 
  • The salad is also great with fresh basil instead of parsley. 
  • Stored in an airtight container in the fridge, it will last up to 3 days.
