This tomato onion salad with fresh parsley is the perfect summer salad. It's fresh, light, and super easy to make! I love to make it for BBQs and potlucks.
Wash and dice the tomatoes. Finely chop the parsley and the red onion. Juice the lemon.
In a small bowl, combine all ingredients for the dressing.
Place all ingredients for the salad in a large bowl and add the dressing and stir well.
Notes
You could also replace the large tomatoes with cherry tomatoes for a change. Cherry tomatoes are usually even more flavorful because of their smaller size.
The salad is also great with fresh basil instead of parsley.
Stored in an airtight container in the fridge, it will last up to 3 days.
