This super easy vegan spring couscous salad is perfect for busy weekday dinners as well as for picnics and BBQs. It's ready to eat in about 15 minutes!

2 stalks celery 2 tomatoes 1/2 cucumber about 10 radishes 1 red or yellow bell pepper 1 cup couscous 1 tablespoon fresh parsley, chopped 1 tablespoon fresh chives, chopped 1 tablespoon fresh dill, chopped 2 tablespoons olive oil 1 tablespoon white wine vinegar salt pepper
Prepare the couscous according to the instructions on the package.
Cut the vegetables into small pieces.
Add them to the couscous and stir in the oil, vinegar, and fresh herbs. Season with salt and pepper.
