Apple Cinnamon Energy Balls

Ingredients

  • 1 cup cashews
  • 1/2 cup almonds
  • 1/2 cup dates
  • 1/2 cup dried apples (no apple chips!)
  • 1/2 cup popped amaranth
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 teaspoon chia seeds

Instructions

  • Put the cashews and almonds into a food processor or blender and pulse. There should still be some small pieces left.
  • Then add the dates, the dried apples, the lemon juice, the chia seeds, the cinnamon, and the amaranth and pulse until it has become a thick, sticky paste. It can still be a little bit crunchy.
  • If the mixture seems to dry or is hard to process in your blender, add an extra teaspoon of water or lemon juice. If the mixture seems too wet, add extra amaranth.
  • Form little balls and roll them in the topping of your choice. Store the energy balls in the fridge.
