Vegan  Stuffed Zucchini

These mouthwatering vegan stuffed zucchinis make the perfect weeknight dinner for the whole family! They are filled with a savory mixture of brown rice, kidney beans, and corn, and topped off with a luscious vegan cheese sauce.

Cook the vegan ground meat.

Sauté the onion.

Add the cooked rice, kidney beans, corn, meat crumbles, and spices.

Place all ingredients for the vegan cheese sauce in a blender.

Blend until smooth.

Cut the zucchinis in halves lengthways and scoop out the flesh with a spoon.

Fill the zucchini with the rice bean mixture and drizzle the vegan cheese sauce on top.

Bake for 20 minutes at 350°F.
