Thai Pineapple Fried Rice

This Thai pineapple fried rice is one of my favorite recipes for busy days! It’s super easy to make, healthy, and so yummy. Plus, it’s so vibrant and colorful! Eating this pineapple rice will be like taking a trip to Thailand!

Made with fresh & simple ingredients!

Cut the pineapple and make a "bowl".

Sauté the onion.

Add the red bell pepper and carrot.

Then add the rice and curry powder.

Add the pineapple, peas, and cashews.

Serve in a pineapple bowl.
