For the Filling:

  • 1.5 lbs apples
  • 1/2 teaspoon cinnamon
  • 2 teaspoons maple syrup
  • 1 tablespoon lemon juice

For the Crumbles:

  • 3/4 cup vegan butter
  • 1 cup all-purpose flour
  • 1 1/4 cup rolled oats
  • 1/2 cup ground almonds
  • 3/4 cup coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch allspice
  • 1 pinch cardamom
  • 1 pinch salt

Instructions

  • Preheat the oven to 350 °F. Slice the apples. Lightly grease a casserole dish with vegan butter and place the apple slices in the prepared dish. Sweeten with maple syrup and sprinkle with cinnamon.
  • Place all ingredients for the crumbles in a food processor.
  • Pulse a few times until crumbles form.
  • Pour the crumble mixture over the apples.
  • Bake the apple crumble for 20-25 minutes until the crumbles are nicely browned. Serve warm with a scoop of vegan vanilla ice cream.

Notes

  • This recipe is very flexible. You can also replace half of the apples with pears for a change. Or you could add frozen berries.
  • It is also great seasoned with pumpkin pie spice or apple pie spice.
  • For a gluten-free version, you can use a gluten-free flour blend and certified gluten-free oats.
