Vegetable  Biryani

This restaurant-style vegetable biryani is super aromatic, loaded with vegetables and crunchy cashews, and it’s incredibly easy to make. Ready in just 30 minutes!

Finely chop the red onion, garlic, and ginger.

Place the basmati rice in a colander and wash it under running water.

Sauté the onion, the garlic, and the ginger for 3 minute.

Add the spices and stir well. Cook for 1 minute until fragrant.

Then add the vegetable broth and simmer for 5 minutes.

Cut the carrots into half moons, the potatoes into small cubes, and the cauliflower into small florets.

Add to the rice and cook covered for 8 minutes on low heat.

Make the yogurt dip with chopped mint and parsley.

Sprinkle the biryani with roasted cashews and serve with yogurt dip.
